At Sapa Cuisine, we proudly serve Phở Gà Bản, made from locally raised, organic black chicken — a specialty breed nurtured naturally by ethnic minorities in the highlands of Sapa. The chicken meat is firm, flavorful, and rich in nutrients, perfectly paired with hand-crafted rice noodles and a clear, aromatic broth simmered for hours with mountain herbs and spices.

Across Southeast Asia, dishes like Nasi Goreng and Rendang (Indonesia), Laksa and Satay (Malaysia), Som Tam and Pad Thai (Thailand) have become regional icons. In 2016, alongside these well-known favorites, the Vietnam Records Organization (VietKings) continued to honor unique and creative dishes from local regions — promoting the diversity and charm of Vietnamese cuisine to the world.
Among the Top 20 New and Unique Vietnamese Dishes were specialties such as Ant Egg Cake (Tuyên Quang), Wild Chicken Stewed with Ginseng (Kon Tum), Jumping Shrimp Pancake (Bình Định), Rattan Shoot Salad with Grilled Prawn (Bình Phước), and Steamed Snakehead Fish with Plum Sauce (Đồng Tháp).
