
Known affectionately as “Cap Nach” Pork, this unique dish originates from the Muong and H’mong ethnic communities of northern Vietnam. The name “Cap Nach,” meaning “underarm pig,” comes from the way locals once carried these small native pigs — each weighing only 4 to 5 kilograms — tucked neatly under the arm on their way home from the market. These free-range pigs are raised naturally in the mountains, feeding on forest roots, maize, and herbs, giving their meat a rich, fragrant flavor and firm texture unlike any other.
